Crispy on the outside and oh-so-cheesy on the inside, quesadillas are a delicious comfort food. And the best part? You can put pretty much anything you want inside them! From different types of meats such as chicken, beef, shrimp and leftover Thanksgiving turkey, to a wide array of cheeses and even some crunchy components such as peppers and onions, there are really no limits.
We we used soft flour tortillas and then filled our hearty quesadillas with finely diced roast turkey, shredded pepper jack cheese for extra oomph, corn, tangy salsa and sliced pepperoncini. This dish is not only a gift to the tastebuds, but it’s also an easy meal to whip up when you’re looking for a fun and creative way to use up those Thanksgiving leftovers. For a year-round option, simply sub in 2 cups of crumbled cooked ground turkey seasoned to your liking and enjoy.

- 2 cups diced roast turkey
- 1 cup corn
- ½ cup salsa
- ¼ cup drained, sliced pepperoncini
- 1½ cups shredded pepper jack cheese
- 4 (8") soft flour tortillas
Instructions
PrintIn bowl, combine turkey, corn, salsa and pepperoncini. Dividing evenly, sprinkle 3/4 cup cheese over half of each tortilla. Top with turkey mixture and remaining cheese. Fold tortilla over filling. Coat large nonstick skillet with cooking spray; heat over medium-low heat. In batches, cook quesadillas, pressing down and flipping once, until cheese is melted, 2–3 min. per side. Halve crosswise before serving.
