Ingredients
- ¼ cup balsamic vinaigrette
- 1 clove garlic, minced
- 1 (16 oz.) ciabatta bread, halved horizontally
- 3 plum tomatoes, sliced
- 3 cups sliced cooked turkey breast
- 11⁄2 cups fresh basil leaves
- 2 jarred roasted red peppers, well drained
- 1 (8 oz.) pkg. fresh mozzarella cheese, sliced
Instructions
- In small bowl, combine vinaigrette and garlic. Place bottom piece of bread on large piece of plastic wrap. Brush cut sides of bread with vinaigrette mixture.
- Layer bottom of bread with tomato slices, turkey, half the basil, roasted peppers, mozzarella slices and remaining basil. Cover with bread top. Wrap tightly in plastic wrap; place on cookie sheet. Top with another sheet and weigh down with books, cans or heavy pans.. Chill in refrigerator at least 4 hrs. or overnight. Cut sandwich into quarters and serve cold or at room temp.
