Bring. the water to a boil, then immediately remove the pan from the heat and cover it. Let the eggs sit for 10-12 minutes for a soft yolk and 14-16 minutes for a firmer yolk. - 4 oz. cream cheese, at room temp.
- 2 Tbs. chopped fresh chives
- 1 tsp. chopped fresh thyme
- 4 hard-boiled eggs
- 1 mini cucumber
- 8 slices white bread, toasted
- 2 cups baby arugula
- 8 oz. low-sodium deli-sliced ham
Instructions
PrintIn medium bowl, stir together cream cheese, chives, thyme, 1 Tbs. water and 1/4 tsp. pepper until smooth. Slice eggs crosswise. Thinly slice cucumber.
Spread one side of each slice of toasted bread with cream cheese mixture. Place 4 slices, coated sides up, on cutting board. Top with baby arugula, ham, cucumber and eggs. Top with remaining bread slices, coated sides down. Slice sandwiches diagonally in half.
