These satisfying bites are better with herb-infused cream cheese

This toasty ham sandwiches recipe requires perfectly cooked hard-boiled eggs. To do so, place your eggs in a single layer in a saucepan and cover with cold water. Bring. the water to a boil, then immediately remove the pan from the heat and cover it. Let the eggs sit for 10-12 minutes for a soft yolk and 14-16 minutes for a firmer yolk. Ingredients

  • 4 oz. cream cheese, at room temp.
  • 2 Tbs. chopped fresh chives
  • 1 tsp. chopped fresh thyme
  • 4 hard-boiled eggs
  • 1 mini cucumber
  • 8 slices white bread, toasted
  • 2 cups baby arugula
  • 8 oz. low-sodium deli-sliced ham

In medium bowl, stir together cream cheese, chives, thyme, 1 Tbs. water and 1/4 tsp. pepper until smooth. Slice eggs crosswise. Thinly slice cucumber.

Spread one side of each slice of toasted bread with cream cheese mixture. Place 4 slices, coated sides up, on cutting board. Top with baby arugula, ham, cucumber and eggs. Top with remaining bread slices, coated sides down. Slice sandwiches diagonally in half.
