  • 1/3 cup olive oil
  • 3 Tbs. lime juice
  • 2 tsp. grated lime zest
  • 2 tsp. green Tabasco sauce
  • 1/2 tsp. salt
  • 6 cups baby spinach
  • 2 cups (1/4”-wide strips) cooked London broil, about 8 oz.
  • 1 red or yellow pepper, sliced
  • 1 1/2 cups red and/or yellow grape tomatoes, halved
  • 1/2 cup red kidney beans, rinsed, drained
  • 4 (71/2”) flour tortillas, warmed
  • 1 avocado, pitted, peeled, sliced
  • 1/3 cup fresh cilantro leaves
  • Lime wedges (optional)

In large bowl, whisk together oil, lime juice, zest, Tabasco and salt. Add spinach, beef, pepper slices, tomatoes and beans; toss until fully coated. Divide beef mixture among tortillas. Top with avocado and cilantro. If desired, serve with lime wedges.
