When deciding the meaty main to pair with your dinner sides, why not make it meatloaf? This spicy mustard-glazed meatloaf is a twist on tradition, as classic meatloaf is often smothered with a tomato glaze. We at the First For Women test kitchen opted for mustard to give it a lighter flavor with a spicy kick while sneaking fresh rosemary and thyme into the meat mixture to give it some earthiness. Don’t have a pressure cooker? Make it in the oven! Simply heat the oven to 375°F, combine the meat mixture as directed in step one and press it into a 9”x5” loaf pan. Brush the top with glaze and bake it until no longer pink in the center, about 1 hour. To finish, broil it on high until browned, about 2 min.

- 1 lb. ground beef
- 1 lb. ground pork
- 1 tsp. dried thyme
- 1 tsp. dried rosemary
- 1 tsp. onion powder
- minced
- 1 tbsp. Worcestershire suace
- 1 egg
- 1/2 c. bread crumbs
- divided
- 1/4 c. ketchup
Instructions
PrintIn bowl, mix together first 9 ingredients and 1/4 cup mustard. Season with salt and pepper. Form into a loaf, then wrap in heavy-duty foil. Poke several holes in the foil. Place in electric pressure cooker pot (on top of potatoes, if desired). Lock lid; cook on high pressure 20 minutes, then quick-release pressure.
Heat broiler.In bowl, mix remaining mustard and ketchup. Carefully unwrap loaf; brush with mustard glaze. Broil 2 minutes or until golden brown.
