Slow-Cooker Teriyaki Pork

This set-it-and-forget-it slow-cooker pork roast makes for a celebration-worthy meal — we like to top it with pineapple salsa.

Ingredients

  • ¾ cup teriyaki sauce, like Kikkoman Less Sodium Teriyaki
  • 3 Tbs. fresh lime juice, divided
  • 1 Tbs. grated fresh ginger or ginger paste, like Gourmet Garden
  • 3 tsp. minced garlic, divided
  • 1½ Tbs. Asian seasoning, like McCormick
  • 1 large onion, sliced
  • 2 (1 lb.) pork tenderloins, trimmed
  • 2 cups diced fresh pineapple
  • ¼ cup minced fresh cilantro
  • 2 Tbs. minced red onions
  • 1 serrano pepper, minced

Instructions

  1. In bowl, combine teriyaki, 2 Tbs. lime juice, ginger, 2 tsp. garlic and Asian seasoning; reserve ¼ cup. Place onions in slow cooker; top with pork. Pour in teriyaki mixture. Cover; cook on low 3 to 4 hrs. or until 145°F.
  2. In small bowl, combine remaining lime juice and garlic, pineapple, cilantro, red onions and serrano peppers. Brush pork with reserved teriyaki mixture; thinly slice. Serve hot or at room temp. with pineapple salsa.
