This Slow-Cooker Sweet Potato Mash Recipe is So Good—and So Simple

Sweet potatoes are loaded with health benefits, thanks to their antioxidants, which aid immunity and improve eyesight, and the soluble and insoluble fiber they contain to help protect the gut. Sweet potatoes are also considered a resistant starch, so they don’t raise your blood sugar the way some other starches do. You can microwave or bake sweet potatoes, of course, but why not try an even more delicious way to prep them for dinner tonight? Mash them and add melted butter, brown sugar and cinnamon for rich flavor.

Instead of cooking sweet potatoes on the stovetop, we came up with an easier and less labor-intensive way to make them – in the slow cooker! With our fuss-free method, simply place peeled sweet potatoes in the slow cooker with water, then cover and cook ‘em on high heat for four hours – it’s as easy as 1-2-3! Once the taters are tender, simply mash them, fold in the mix-ins and garnish with glazed pecans for a picture-perfect and truly delicious side dish.

Ingredients

  • 3 lbs. sweet potatoes, peeled
  • 4 Tbs. butter, cut into pieces
  • ¼ cup packed light brown sugar
  • ¼ cup heavy cream
  • ½ tsp. ground cinnamon
  • ⅓ cup glazed pecans, chopped

Coat 4-qt. slow cooker with cooking spray. Cut potatoes into 1" pieces. Place potatoes in bottom of slow cooker; add 1 cup water. Cover; cook on high until tender, 4 hrs. Drain.

Return to slow cooker; mash. Stir in butter until melted, then brown sugar, heavy cream, cinnamon and 1⁄2 tsp. salt. Transfer to serving bowl. Top with glazed pecans.
