Delicious Slow Cooker Brown Sugar Pork Roast Recipe Preps Quick

There’s simply nothing better than coming home to the comforting aroma of a hot meal that’s been simmering for hours. That’s why our test kitchen manager pulled out a slow cooker and came up with this Brown Sugar Pork Roast recipe. We started by rubbing a mixture of brown sugar and mustard over the meat, then browns it to create a sweet-tart coating. Next we braised the roast in stock and onions. As the pork simmers, the juices combine with the cooking liquid to form a rich sauce infused with some of the mustard and sugar. When it’s done cooking, all that’s left to do is transfer the roast to a platter and serve it up with the flavorful gravy on the side. Talk about easy! Best of all, the recipe calls for only six ingredients and it preps in just 10 minutes. Just set-it-and-forget-it in the morning and let this succulent meal cook itself!

Ingredients

  • ½ cup packed brown sugar
  • 3 Tbs. Dijon mustard
  • 1 (3 lb.) boneless pork loin roast
  • 1 Tbs. olive oil
  • 1 onion, thinly sliced
  • ¾ cup chicken stock

In small bowl, whisk together brown sugar, mustard, ¼ tsp. salt and ¼ tsp. pepper until smooth; rub pork roast all over with mixture.

In large nonstick skillet, heat oil over medium-high heat. Add pork; cook, turning occasionally, until browned on all sides, about 5 min. Transfer pork to 6-qt. slow cooker. Add onion and chicken stock. Cover; cook on low 8 hrs.

Carefully lift pork roast from slow cooker and transfer to serving platter. Tent loosely with foil; let stand 30 min. before slicing. With slotted spoon, remove onions from slow cooker and place on top of and around pork on platter. Pour remaining liquid from slow cooker into gravy boat; serve alongside sliced pork. Garnish roast as desired.
