Mashed potatoes are such a treat. They’re the perfect satisfying accompaniment to virtually any meaty main. And we’ll let you in on a little secret: You can make them more nutritious and just as delicious — but with half the carbs — by adding some cauliflower. The best part is that no one will ever guess you combined cauliflower with the potatoes unless you tell them. They’re that good!
For this creamy potato-cauliflower mash, we simmer potatoes and cauliflower florets until tender, then mash them together with butter, thyme and some chicken broth. The broth deepens the flavor, and as a bonus, it’s also packed with nutrients, including protein. The cauliflower adds fiber and antioxidants that help in protecting cells and reducing inflammation. The result is a flavorful, indulgent tasting mash that’s good for you, too! Give this recipe a try and then comment below to let us know how you liked it.
