On Saturdays during summer, I love to host a backyard bash. And if I’m firing up the grill to cook up a steak, why not pop the side on the grates too. So, I’m always looking for fun and delicious ideas that are easy yet deliver big on flavor. Now this Savory Thyme Packet Potatoes recipe is my go-to favorite. It preps in just 15 minutes. Plus,the packets make clean up a breeze.
Potatoes and peppers are a match made in heaven. Fresh herbs, tangy Dijon, creamy butter and olive oil add even more irresistible mmm. Cooking the mixture in tightly wrapped foil helps infuse the spuds with all that deliciousness. Better yet, the foil conducts heat so the veggies still get those grill marks we all love. Ingredients
- 1 Tbs. chopped fresh thyme
- 1 Tbs. Dijon mustard
- 1 Tbs. butter, melted
- 1 Tbs. olive oil
- 2 lbs. baby red and/or white potatoes, quartered
- 2 red, green, and/or yellow peppers, sliced
- 6 cloves garlic
Instructions
PrintPrepare grill for medium direct-heat cooking. In bowl, combine first 4 ingredients. Add potatoes, peppers and garlic; toss gently to coat. Spoon mixture into center of 14" square of heavy-duty foil. Season with salt and pepper. Fold foil over potatoes; seal.
Grill packet, shaking occasionally with tongs, until potatoes are tender and golden brown, about 30 min. Let cool slightly before opening packet.
