- 1 lb. trimmed rhubarb, cut into 2½"-long pieces
- ⅔ cup sugar
- ½ cup strawberry jam
- 8 (3") baked pie crust squares
- ¼ cup chopped pistachios, toasted
Instructions
PrintHeat oven to 400°F. Arrange rhubarb in single layer in 13"x9" baking dish; sprinkle with sugar. Cover with foil and bake 10 min. Uncover; bake until tender, about 10 min. Let cool. Stir strawberry jam, then spread 1 Tbs. over each pie crust square. Dividing evenly, arrange rhubarb over each crust square. Sprinkle with pistachios.
