This Potato Croquettes Recipe Transforms Buttery Mashed Potatoes Into Crispy Snack-Sized Bites

Convenient instant mashed potato flakes allow you to make these potato nuggets without hassle

If you’re craving a snack that’s crunchy on the outside and fluffy inside, you’ll love this Potato Croquettes recipe. Instant mashed potato flakes are rehydrated using boiling hot water to create a smooth spud base in a couple of minutes. The mashed potatoes are then combined with an egg, grated Parmesan cheese and garlic powder before they’re formed into round croquettes. The croquettes are then breaded and fried until they’re golden brown. What you end up with is a batch of buttery croquettes that are delicious plain or with a side of ketchup.

  • 2 cups instant mashed potato flakes
  • 2 eggs
  • ¼ cup grated Parmesan cheese
  • ½ tsp. garlic powder
  • 2 inches oil
  • ½ cup plain dry breadcrumbs

Line baking sheet with wax paper. Mix potato flakes and 11⁄2 cups boiling water. Stir in 1 egg, cheese and garlic powder. Shape into 18 balls. Transfer to baking sheet; cover. Chill 1 hr. In heavy pot, heat oil to 325°F. Beat remaining egg. Dip balls into egg; roll in crumbs. In batches, fry balls until cooked through and golden, 1–2 min.
