Pico de gallo, also known as salsa fresca (fresh salsa), is a staple condiment in Mexican cuisine. Unliked cooked salsas, pico de gallo features fresh, chopped ingredients like tomatoes, onions, cilantro and lime juice. The simplicity of these ingredients allows the fresh flavors to shine by themselves, without any heat. Believed to have emerged in Mexico sometimes during the colonial period, this dip traditionally comes alongside tacos, burritos or as a topping for various Mexican dishes. It can also be enjoyed with chips and guacamole for a refreshing appetizer. Our traditional pico de gallo recipe uses fresh limes, veggies and herbs, plus a little kick of green Tabasco sauce for some heat. - 2 limes
- 1 lb. tomatoes, seeded, diced
- 1/2 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 clove garlic, minced
- 1 tsp. green Tabasco sauce
- 3 cups tortilla chips
Instructions
PrintGrate 1/2 tsp. zest and squeeze 2 Tbs. juice from limes.
In medium bowl, combine tomatoes, onion, cilantro, garlic, Tabasco, lime zest, lime juice, 1/4 tsp. salt and 1/4 tsp. pepper. Transfer to serving bowl. Serve with chips.
