Ingredients
- 1½ cups honey roast peanut butter, divided
- ¼ cup, plus 3 Tbs. butter, at room temp. and divided
- ¾ cup rolled Kamut, oats or barley
- 2 (3.4 oz.) pkgs. instant vanilla pudding mix
- ½ tsp. baking soda
- 2 large eggs
- ⅔ cup powdered sugar
- 1½ tsp. milk
Instructions
- With mixer on medium speed, beat 1 cup peanut butter and ¼ cup butter 1 min. Beat in Kamut, pudding mix, baking soda and eggs. Roll into 36 balls; arrange on lined pans. Flatten to ¼” thickness. Bake at 350°F for 8 min. Cool.
- With mixer on medium, beat sugar, milk and remaining peanut butter and butter 30 sec.; spread between cookies.
