So Easy Peach Melba Panna Cottas Recipe Is the Perfect Creamy, Dreamy Treat

Panna cotta means “cooked cream” in Italian. This silky-smooth delight is made with a mix of cream, milk and sugar. It’s heated on the stove top, then thickened up with gelatin instead of eggs. To speed things up, for our recipe, we use half-and-half. It combines two ingredients in one so there’s less to measure. A dash of vanilla extract gives it an extra dose of deliciousness. Ingredients

  • 2 cups half-and-half, at room temp.
  • 7 Tbs. sugar
  • 1 tsp. vanilla extract
  • 3 (¼ oz.) envs. unflavored gelatin
  • 4 cups peeled, sliced fresh peaches
  • 1 Tbs. lemon juice
  • 3 (6 oz.) conts. fresh raspberries + additional

In bowl, mix half-and-half, 2 Tbs. sugar and vanilla. In 2-qt. microwavesafe bowl, mix 2 Tbs. water and 1 env. gelatin; let stand until absorbed, 5 min. Microwave until melted, about 10 sec.; stir in half-and-half mixture. Spoon into 6 (8 oz.) glasses. Chill until set. 

In batches, puree peaches, 2 Tbs. sugar, lemon juice and 1⁄2 cup water. In 2-qt. microwave-safe bowl, stir 2 Tbs. water into 1 env. gelatin; let stand 5 min. Microwave 10 sec. Stir in peach puree. Pour over vanilla layer. Chill. 

Puree 3 containers berries, remaining sugar and 3⁄4 cup water; strain. In 2-qt. microwave-safe bowl, stir 2 Tbs. water into remaining env. gelatin; let stand 5 min. Microwave 10 sec.; stir in berry puree. Pour over peach layer. Chill. Top with additional berries.
