Ingredients
- 4 Tbs. butter
- 2 scallions, thinly sliced
- 3 cloves minced garlic
- 2 lbs. potatoes, peeled, sliced
- 1⅔cups heavy cream
- ½ cup grated Parmesan cheese
Instructions
- Heat oven to 400°F. Grease 2-qt. baking dish. In pot, melt butter over medium heat. Add scallions; cook, stirring, until softened, 1–2 min. Add garlic; cook 1 min. Stir in potatoes, cream and ½ tsp. salt; bring to a boil.
- Cook until potatoes have softened and liquid has thickened, 8–10 min. Transfer half of mixture to baking dish; top with half of cheese. Repeat layering once. Bake until golden and bubbly, about 25 min.
