When you think about an orange creamsicle, chances are, a hot summer day comes to mind. The refreshing treat is traditionally an orange-flavored popsicle with an ice cream center, which is an utterly irresistible combination in the warmer months. We were convinced, though, that the dynamic duo could team up in new and different ways. So, at the First For Women test kitchen, we recreated the classic popsicle into a luscious layer cake.
We started with yellow cake mix and folded orange juice into the batter. Then, we whipped up a homemade frosting made with heavy cream and cream cheese to achieve that creamsicle texture. Lastly, we piped beautiful rosettes on top of the. cake and garnished it with Mandarin orange segments. And there’s a bonus: The cake is as easy on your wallet, as it is delicious. It only costs 56 cents per serving!

Ingredients
- 1 (15.25 oz.) yellow cake mix
- 3 eggs
- 1/2 cup orange juice
- 1/2 cup oil
- 1 tsp. grated orange zest
- 8 oz. cream cheese, at room temp.
- 1 cup confectioners’ sugar
- 1 tsp. vanilla extract
- 1 3/4 cups heavy cream
- 1 cup drained Mandarin orange segments, from 11-oz. can
Instructions
PrintHeat oven to 350°F. Grease 4 (8”) round cake pans. On low speed, beat cake mix, eggs, juice, 1/2 cup water and oil, 30 sec. On medium, beat 2 min.; stir in zest. Divide evenly among pans. Bake until pick inserted in centers comes out clean, 15 min. Cool 10 min. Transfer from pans to rack; cool.
On medium, beat cream cheese, confectioners’ sugar and vanilla until smooth. Add 1/2 cup heavy cream; beat until blended. Gradually beat in remaining cream until combined; beat until stiff. Transfer 1 cup mixture to pastry bag fitted with star tip. Trim cakes if domed. Place 1 cake on serving plate; spread with 3/4 cup frosting. Repeat twice. Top with remaining cake and frosting. Pipe on rosettes. Garnish with orange segments.
