My breakfast choices often vary between hot or cold dishes. Though, the summer weather has made me lean heavily toward chilled options like this Mixed Berry Smoothie Bowls recipe. It takes all of the components of a smoothie — fruit, yogurt and milk — and blends them into a thick mixture you can serve in individual bowls. Chia seeds are also added to the smoothie base for a slight crunchy texture and gut health boost.
Once assembled, it’s up to you to garnish these smoothie bowls with more berries, sunflower seeds and/or basil leaves. While the recipe calls for unsweetened almond milk, you can use another dairy-free variety to create a creamy base. The best part about this recipe is that it only requires 4 main ingredients and comes together in 20 minutes. This makes it a speedy and nourishing breakfast option.

- ½ cup unsweetened almond milk
- 2 Tbs. chia seeds
- 1 cup frozen mixed berries, thawed, not drained
- ¾ cup plain nonfat Greek yogurt
- Assorted fresh berries, sunflower seeds and basil leaves (optional)

PrintIn bowl, combine 1⁄4 cup almond milk and chia seeds; let stand until milk is absorbed, about 15 min. In blender, combine mixed berries, Greek yogurt, chia seed mixture and remaining 1⁄4 cup almond milk. Cover blender and puree until smooth. Divide mixture evenly between 2 bowls; cover. Chill until ready to serve. If desired, top with fresh berries, sunflower seeds and basil leaves.
