- 1 ½ cups pancake and baking mix
- ¼ cup ricotta cheese
- 2 Tbs. sugar
- ½ cup lemon curd
- ⅓ cup seedless strawberry jam
- 4 cups mixed berries
Instructions
PrintHeat oven to 450°F. Grease baking sheet. Mix baking mix, ricotta cheese, sugar and 1/4 cup hot water until dough forms. Divide in half; shape into balls. Flatten to 2 (7 ½") rounds; transfer to baking sheet.
Bake until golden, 8–10 min. Let cool. Spread with lemon curd and strawberry jam. Add mixed berries.
