At my house pizza night is our favorite night of the week. And I have to admit, I usually call for delivery. It’s easy, fast and delicious. But sometimes I crave something a little more special. That’s what inspired this Mediterranean Pizzas recipe. It’s ready to eat in practically no time. Plus, our tasty topping has a few surprise ingredients that make it even better than take-out.

We start by browning beef and onions then stir in a pantry staple – tomato paste. This steps caramelizes the natural sugars and makes it incredibly rich. Then mix in diced tomatoes and cook until the flavors blend. Now for the secret ingredients. Stir in cinnamon, cumin and mint. The spices bloom to deliver a surprising sweet savory-note while the herb adds a bright pop. Spread the mixture on store-bought crust and top with melty mozzarella and pine nuts. So delicious! Ingredients

  • 2 Tbs. olive oil
  • 1 small onion, finely chopped
  • 1 lb. ground beef
  • 2 Tbs. tomato paste
  • 1 (14.5 oz.) can diced tomatoes
  • 2 Tbs. pine nuts, toasted
  • 1/2 cup chopped mint + extra leaves for garnish
  • 1 Tbs. balsamic vinegar
  • 1 tsp. honey
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground cumin
  • 2 large store-bough pizza crusts
  • 1 cup shredded mozzarella cheese
  • 1/4 cup non-fat plain Greek yogurt

Heat oven to 400°F. Lightly grease and line 2 baking sheets with parchment paper. In large skillet, heat oil over medium heat. Add onion and cook, stirring, until softened, 4-5 min. Increase heat to medium-high. Add beef and cook, stirring, breaking up lumps, until browned, 6-8 min.

Add tomato paste. Cook 1 min. Mix in tomatoes. Simmer until thickened, 4-5 min. Remove from heat. Stir in pine nuts, chopped mint, vinegar, honey, and spices.

Place pizza crusts on baking sheets. Spread beef mixture over crusts. Sprinkle with cheese. Bake until crisp and golden and cheese has melted, 10-12 min. Dollop with yogurt and scattered with mint leaves.
