It’s packed with zesty flavors thanks to store-bought tzatziki, a creamy sauce made with yogurt, garlic, cucumber and herbs, plus crunchy peppers, juicy tomatoes and some fresh oregano. The ingredients are layered into pita pockets, creating the perfect handheld bites for summer.
Even better, you can do much of the prep work for these gyros in advance. Simply slice the vegetables, place them in a bowl and store covered in the fridge for a few hours or overnight. - 4 mini cucumbers
- 4 small tomatoes
- 2 red and/or green bell peppers
- 1 cup sliced white onion (optional)
- 8 mini pita breads
- 1 cup tzatziki sauce
- Fresh oregano (optional)
Instructions
PrintCut mini cucumbers and tomatoes into 1/4”-thick slices. Finely dice peppers. If using, thinly slice onion. Slice 5” opening in pita breads to form pockets. In medium bowl, toss cucumbers, tomatoes, peppers, onions (if using), 1/4 tsp. salt and 1/4 tsp. pepper until combined.
Dividing evenly, fill pockets of pita breads with vegetable mixture. Transfer to platter. Drizzle each with 2 Tbs. tzatziki sauce. If desired, garnish with fresh oregano.
