Our Chicken and Pita Salad Recipe Is Tasty + Table-Ready in Under Half an Hour!

Our clever take on panzanella salad can be customized with veggies you have on hand

Colorful with bits of crispy pita bread throughout, this salad is made into a centerpiece thanks to it’s addition of protein-packed chicken and fiber-filled chickpeas. Furthermore, we added in sliced bell peppers for crunch and scallions for a tough of onion-y flavor! The best part? This healthy main is also easy on your wallet, totalling in at a whopping $1.84 per serving!  

Chef’s Trick To Seeding Peppers Effortlessly

Removing the seeds and core from peppers can be a messy chore. The solution: Cut off the pepper top and bottom, then make a vertical slice down one side. Starting at the slice, run your knife parallel to the flesh along the inside edge while rolling the pepper in the direction the knife is moving. The seeds, core and ribs will come off in one piece, then simply slice or chop the veggie as desired.

Ingredients

  • 2 (8 oz.) boneless, skinless chicken breast halves
  • 2 pita breads
  • 1 (15 oz.) can chickpeas
  • 2 red and/or yellow peppers, cut into strips
  • 3 scallions, sliced
  • ½ cup bottled vinaigrette dressing

Instructions

Place chicken in pot; add enough water to cover by 1". Bring to a boil; reduce heat to medium-low. Cover; cook until no longer pink in thickest part, 5 min. Drain.

Meanwhile, coat grill pan with cooking spray; heat over medium heat. Add pita bread; cook, flipping once, until toasted, 2 min. per side. Break into pieces. Rinse and drain chickpeas. Slice chicken. In large bowl combine chicken, pita bread, chickpeas, peppers, scallions and dressing; toss until combined. If desired, sprinkle with parsley.
