Ingredients
- 1 roasting chicken (six to seven pounds)
- 1 tsp. dried sage
- 1/2 tsp. garlic powder
- 1/3 c. honey
- 1/4 c. bourbon
- 2 tbsp. light soy sauce
- 1 tsp. grated orange zest
Instructions
PrintHeat oven to 375 degrees Fahrenheit. Place chicken in large roasting pan; sprinkle with dried sage, garlic powder, one teaspoon salt, and 1/2 teaspoon pepper. Truss, if desired. Roast one hour, 40 minutes or until no longer pink near bones.
Meanwhile, in small pot over medium heat, bring honey, bourbon, soy sauce, and orange zest to a boil. Simmer 10 minutes or until reduced by half. Remove from heat. Brush chicken with mixture twice during last 20 minutes of cooking time.
