Shortcut Herbed Feta Rolls Recipe: Crispy, Creamy and So Delicious

Plenty of fresh dill and parsley add so much bright flavor

When you’re having guests over, it’s easy enough to set out some chips and salsa or hummus and veggies, but sometimes you want to serve up a snack that feels a little more special. And our Herbed Feta Rolls recipe is perfect for those occasions! We filled crunchy egg roll wrappers with fresh dill, tangy feta cheese and peppery parsley so they’re bursting with flavor in every bite. Even better? You can assemble them the day before and pan-fry just before serving, so they’re extra easy on you.

And here’s another timesaving trick: Plenty of fresh herbs make these handheld bites extra delicious, but chopping them with a knife can cause little bits to scatter everywhere. That’s why in the First for Women test kitchen, we like to put herbs in a tall glass, then snip them with shears. Not only do the blades make quick work of chopping, the glass keeps cuttings contained so cleanup is a breeze.

Ingredients

  • 2 (8 oz.) pkgs. cream cheese, at room temp.
  • 14 oz. feta cheese
  • ½ cup chopped fresh parsley + additional leaves for garnish
  • ½ cup chopped fresh dill
  • 12 egg roll wrappers, from 18-oz. pkg., cut in half
  • 1 egg, beaten
  • ⅓ cup oil

In food processor, pulse cream cheese and 8 oz. feta until smooth. Stir in chopped herbs. Transfer to pastry bag; cut 1"-wide opening. Cut remaining feta into 24 sticks. Pipe (3½'x1") log of cheese mixture lengthwise in center of wrappers; top with feta. Fold short sides in. Brush edges with egg; roll up.

In skillet, heat 2 Tbs. oil over medium. In batches, cook rolls, turning occasionally, 5 min. per batch, adding more oil as needed. Transfer to platter; garnish with parsley leaves.
