  • 1/4 cup sugar
  • 4 (1/4” thick) round slices fresh ginger
  • 4 peaches, halved, pitted
  • 2 cups coconut ice cream

In pot, combine sugar, 1/3 cup water and ginger. Over medium heat, bring to a boil; reduce heat to medium-low. Cook, stirring constantly, until sugar is dissolved and flavors blend, 1–2 min. Transfer to heatproof bowl; let cool, leaving ginger in syrup. Strain and discard ginger. Prepare grill for medium direct-heat cooking. Brush peaches with some syrup; grill until marks appear and peaches are just tender, about 3 min. Transfer 2 peach halves to each of 4 bowls; dividing evenly, top with sorbet. Drizzle with additional syrup.
