Ingredients
- 4 oz. bacon, chopped
- 1 ½ lbs. green beans
- 2 shallots, chopped
- 2 cloves garlic, minced
- 2 Tbs. sherry
- 1 cup heavy cream
- 2 tsp. cornstarch
Instructions
- In pan over medium-high heat, cook bacon until crisp. Transfer to bowl. Add beans to pan; sauté 10 min., stirring. Transfer beans to platter.
- In same pan over medium heat, cook shallots and garlic in bacon fat 5 min. Add sherry; cook 2 min. Whisk in cream; let simmer 5 min. Add cornstarch; let simmer 5 min., whisking. Season to taste with salt and pepper. Pour sauce over beans; top with bacon.
