Festive From-Scratch Whoopie Pies Recipe is the Ultimate Holiday Treat

Whoopie pies, two cake-like cookies sandwiched together with fluffy marshmallow frosting in between, are beloved for their sweet, chocolate goodness and luscious filling. In this version, we made them extra special by using red velvet cake mix and then drizzling red candy melts on top for a festive twist. They’re perfect for Christmas or Valentine’s Day — or really, any day in between. And they’re easy to make!

Believed to have originated in the Amish regions of Pennsylvania, whoopie pies may have gotten their unique name from a practice dating back to the early 1900’s, when Amish women would use leftover cake batter to make cookies. They would sandwich the cookies with frosting and pack them into farmers’ lunchboxes as a treat. When the farmers opened up their lunch to find the sweet dessert, you can probably guess what they yelled: “whoopie!” And so, as the legend goes, the term “whoopie pies” was born.

When you serve these to your guests this holiday season, don’t be surprised if they yell “whoopie,” too!

Ingredients

  • 1 (15.25 oz.) pkg. red velvet cake mix
  • 2 eggs
  • 1 cup butter, at room temp.
  • 2 Tbs. unsweetened cocoa powder
  • 1 cup confectioners’ sugar
  • ⅔ cup marshmallow creme
  • ½ cup red candy melts, melted

Heat oven to 350°F. Line baking sheets with parchment. In bowl, mix cake mix, eggs, 1⁄2 cup butter and cocoa until dough forms. Roll into 1 Tbs. balls. Place on baking sheets 2" apart. Bake until set, 8-10 min. Let cool. On medium, beat remaining butter, sugar and marshmallow creme until fluffy; use to sandwich cookies. Drizzle with candy.
