You’ll Love How Easy (And Delicious!) This Stuffed Avocados Recipe Is

Make the filling a day ahead — the flavors get better the longer it sits

Avocado is certainly having a moment — from guacamole to avocado toast, it seems like there are more ways than ever to enjoy this creamy fruit. And we’re all for it! That’s why we came up with this Stuffed Avocados recipe. It’s chock full of good-for-you fats and protein thanks to a hearty black bean filling. We also added in corn, tomatoes, red onion and cilantro for tons of irresistible flavor.

The best part about this dish? There’s no cooking required! We do recommend making the filling in advance — that way, the lime really coats and flavors the veggies and beans. Season with salt and pepper for an even bigger boost of flavor. Other than that, all you have to do is pop this in the fridge and grab it when you’re ready for a meal. Ingredients

  • 1 lime
  • 1 tsp. olive oil
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup cherry tomatoes, quartered
  • 1/2 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 3 medium avocados, halved and pitted

Grate 2 tsp. zest and squeeze 3 Tbs. juice from lime. In bowl, whisk lime juice and olive oil until combined. Add black beans, corn, tomatoes, red onion, cilantro, lime zest and 1/4 tsp. salt; toss to combine. 

Divide bean mixture among avocado halves. Chill or serve at room temp.
