This Sticky Pork Cups Recipe Is the Delicious Low-Carb Way to Satisfy a Taco Craving Fast!

Got a taste for tacos but prefer to skip flour tortillas? This sticky pork cups recipe is just the thing. It delivers a spicy and sweet meaty filling and uses tender butter lettuce leaves as the “taco shell.” That gives you all the flavor without the carbs!

What makes this dish truly special is a sauce we use called kecap manis, a sweet soy sauce that caramelizes into a luscious glaze that perfectly complements the pork. Red and green chili peppers add a little heat to the meat, and ginger contributes a zesty pop. Can’t find recap manis? Make a substitute by mixing equal parts soy sauce and sugar.

Ingredients

  • 2 tbsp. vegetable oil
  • 1 lb. pork mince
  • sliced
  • seeds removed, finely chopped
  • seeds removed, finely chopped, plus extra to serve
  • peeled, grated
  • finely chopped
  • 1/2 c. kecap manis
  • 1/4 c. chopped water chestnuts
  • leaves separated
  • sliced

In a large wok or frying pan, heat oil on high. Stir-fry mince, onion, green and red chili, ginger, and garlic, breaking up lumps, 5-6 mins until the mince is well browned.

Add kecap manis and water chestnuts. Stir-fry a further 1 min.

• Spoon mince mixture into lettuce cups. Top with green onion and extra chili, to serve.
