This Slow-Cooker Spicy Jambalaya Recipe Is Super Simple and Totally Satisfying

Andouille sausage adds authentic Cajun flair to this delicious dish

Bring some Cajun flavor to your dinner with our delicious spicy jambalaya recipe. We use andouille sausage, which is naturally cured with cayenne pepper and paprika, to give our version some extra kick. If you’re sensitive to spice, swap in ground pork, sweet Italian sausage or precooked chicken sausage instead.

This dish couldn’t be easier — just put it in the slow cooker with chicken, tomatoes, peppers, broth and seasonings. Let it cook for a few hours and then add rice. When seeding peppers for this recipe, try this time-saving trick: Cut off the pepper top and bottom, then make a vertical slice down one side. On a flat surface, starting at the slice, run your knife parallel to the flesh along the inside edge while rolling the pepper in the direction the knife is moving. The seeds, core and ribs will come off in one piece.

  • 3 cups chicken broth
  • 1 (14.5 oz.) can diced tomatoes
  • 2 tsp. Creole seasoning
  • 2 links andouille sausage (6 oz.)
  • 1 onion, chopped
  • 1 rib celery, chopped
  • 1 red pepper, diced
  • 1 lb. boneless, skinless chicken thighs
  • 1 cup rice
  • 1 scallion, chopped


• Combine broth, tomatoes with juice and seasoning; reserve. Cut sausage into ¼"-thick slices. Place onion, celery and red pepper in 6-qt. slow cooker. Top with sausage and chicken. Pour reserved broth mixture over top. 

• Cover; cook on low 3½ hrs. Stir in rice. Cover and cook on low 1 hr. 

• Using 2 forks, shred chicken. Stir back into rice mixture. Top with scallion.
