This easy pizza recipe would be perfect for a family dinner.
- 2 tbsp. olive oil
- 1 onion finely chopped
- 1 lb. beef mince
- 2 tbsp. tomato paste
- 14 oz. can diced tomatoes
- 2 tbsp. pine nuts toasted
- 1/2 c. chopped mint plus extra to serve
- 1 tbsp. balsamic vinegar
- 1 tsp. honey
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground cumin
- 2 large store-bought pizza bases
- 1 c. shredded tasty cheese
- Greek-style natural yogurt to serve
In a large frying pan, heat oil on medium. Cook onion 4-5 mins until softened. Increase heat to high. Add mince and brown, breaking up lumps, 6-8 mins.
Add tomato paste. Cook 1 min. Mix in tomatoes. Simmer 4-5 mins until thickened. Remove from heat. Stir pine nuts, mint, vinegar, honey, and spices through.
Preheat oven to 400 degrees Fahrenheit. Lightly grease and line 2 oven trays with baking paper. Place pizza bases on trays.
Spread beef mixture over bases. Sprinkle with cheese. Bake 10-12 mins until bases are crisp and golden and cheese has melted. Serve topped with dollops of yogurt and scattered with extra mint leaves.
Tip: You can omit the pine nuts, if you like.
