- 1 boneless chuck roast
- 1/2 c. Dijon mustard
- 4 tbsp. prepared horseradish drained
- 1 c. seasoned bread crumbs
Heat oven to 425 degrees Fahrenheit. Season beef generously with salt and pepper on all sides. Place beef on rack set in roasting pan. Brush with half the mustard. Roast 30 minutes. Reduce oven temperature to 325 degrees. Roast 1 and 1 ⁄2 hours more.
In a bowl, stir together prepared horseradish, bread crumbs, and remaining mustard. Season to taste with salt and pepper. Remove beef from oven; pat mixture over top.
Return beef to oven; roast 10 minutes or until meat thermometer 130 degrees Fahrenheit for medium-rare. Lightly cover with aluminum foil; let sit 20 minutes before carving.
