- 2 tbsp. butter melted
- 2 cloves garlic minced
- 1/2 tsp. paprika
- 1/2 tsp. dried basil
- 1/2 tsp. dried thyme
- 1/2 tsp. cayenne pepper
- 1 whole roasting chicken (3 lbs.)
Heat oven to 350°F. In bowl, combine butter, garlic, paprika, basil, thyme, cayenne, and 1 tsp. salt. Place chicken in roasting pan. Brush butter mixture over chicken. If desired, truss chicken with kitchen string.
Roast chicken 1 hr. or until meat thermometer inserted into thickest part of thigh away from bone registers 170°F. Tent with foil if chicken starts to brown too quickly. Let stand 15 min. before carving. Serve chicken with pan juices.
