This easy whoopie pie recipe has a seriously sweet twist waiting for you inside.
- 1 (15.25 oz.) pkg. devil’s food cake mix
- 3 egg whites
- 1 (10 oz) pkg. frozen chopped spinach thawed, squeezed dry and puréed with 3/4 cup water
- 1 c. Marshmallow Fluff
- 4 oz. 1⁄3-less-fat cream cheese at room temp.
- 5 tsp. low-sugar strawberry jam
Heat oven to 350°F. Line 2 baking sheets with parchment. With mixer, beat first 3 ingredients until smooth.
Spoon 3-tbsp. mounds onto sheets. Bake 10 min. With mixer, beat Fluff and cheese. Dot flat side of 12 cookies with 1⁄2 tsp. jam; spread with frosting. Top with remaining cookies.
