Get Transported to a Tropical Island With This Easy Piña Colada Cupcakes Recipe

Cake mix gets a bakeshop-worthy upgrade from rum-kissed frosting and shredded coconut

My favorite type of vacation is sitting in the sand with a book in one hand and a drink in the other. It’s even better if the beverage is of the tropical sort. But when it’s not always easy to jet-set to a beachy destination, an easy alternative is bringing those sweet, lush flavors out in the comfort of your kitchen. It’s exactly why we put our tropic tastebuds to the test with our Piña Colada Cupcakes recipe.

We use boxed cake mix in this recipe to make things even easier, plus the frosting is the real star of the show. Made with vanilla and rum extracts, plus sugar and butter, of course, it really ties this sweet treat together. I’d also be a little bold and mix a splash or two of actual rum in there because that’s really the best part of a Piña Colada. So, cheers to this decadent dessert!

Ingredients

  • 1 (15.25 oz.) pkg. yellow cake mix
  • 3 eggs
  • ⅓ cup oil
  • 1½ cups unsweetened shredded coconut
  • ½ cup canned crushed pineapple
  • 1 cup butter, at room temp.
  • 3 cups confectioners’ sugar
  • 1 tsp. rum extract
  • 1 tsp. vanilla extract
  • Maraschino cherries and fresh pineapple pieces (optional)

Heat oven to 350°F. Line 24 muffin cups with cupcake liners. On low speed, beat cake mix, 1 cup water, eggs and oil until blended, 30 sec.; on medium, beat 2 min. Stir in 1 cup coconut and pineapple. Evenly divide batter among cupcake liners. Bake until toothpick inserted into centers comes out clean, 18–21 min. Cool 15 min. Transfer from pans directly to racks; cool completely.

On medium-high, beat butter until fluffy, 1–2 min. On low, gradually beat in confectioners’ sugar until combined, 2–3 min. Add 2 Tbs. water and extracts; on medium-high, beat until fluffy, 1–2 min. Dollop frosting onto cupcakes. Sprinkle with remaining coconut. If desired, garnish with cherries and pineapple slices.
