Mixed Berry Pizzas Recipe Is Fresh, Fruity and Preps in Just 20 Minutes

Then we like to top it with lemon curd and strawberry jam, though you can mix and match those flavors with whatever you prefer.

  • 1 ½ cups pancake and baking mix
  • ¼ cup ricotta cheese
  • 2 Tbs. sugar
  • ½ cup lemon curd
  • ⅓ cup seedless strawberry jam
  • 4 cups mixed berries



Heat oven to 450°F. Grease baking sheet. Mix baking mix, ricotta cheese, sugar and 1/4 cup hot water until dough forms. Divide in half; shape into balls. Flatten to 2 (7 ½") rounds; transfer to baking sheet.

Bake until golden, 8–10 min. Let cool. Spread with lemon curd and strawberry jam. Add mixed berries.
