Prepared lemon curd is the shortcut to topping this creamy confection

I’m always up for a slice of cheesecake — that creamy goodness is just irresistible. So when our First for Women test kitchen pros came up with this Lemon Cheesecake Recipe, I couldn’t wait to try it. And let me tell you, it does not disappoint! This dessert is decadent, delicious and full of zesty flavors. 

In fact, citrus lovers are sure to be in heaven as we’ve added plenty of lemon, with fresh juice and zest in the creamy base, plus a store-bought lemon curd topping for the ultimate finish that’s easy on you. Top it with our homemade whipped cream and enjoy. Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 5 Tbs. + 1/2 cup sugar
  • 6 Tbs. butter, melted
  • 1 3/4 cups heavy cream
  • 2 1/2 (8 oz.) pkgs. cream cheese, at room temp.
  • 3/4 cup lemon curd
  • 1 Tbs. lemon juice
  • 1 tsp. grated lemon zest
  • 1 (1/2 oz.) env. unflavored gelatin

In bowl, mix crumbs and 2 Tbs. sugar; stir in butter. Press into 8”x3” springform pan; chill 20 min. On medium-high speed, beat 1 cup cream and 2 Tbs. sugar until stiff; reserve. In separate bowl, on medium, beat cream cheese and 1/2 cup sugar until smooth; beat in 1/2 cup lemon curd, lemon juice and zest. In 1-qt. microwave-safe bowl, stir 2 Tbs. water into gelatin; let stand until absorbed, 5 min. Microwave until melted, 10 sec. Stir in 1 cup cream cheese mixture. Fold gelatin mixture back into remaining cream cheese mixture. Fold in whipped cream. Transfer to pan. Cover; chill 6 hrs.

Run knife along cake edge. Remove side of pan. On medium-high, beat remaining cream and sugar until stiff. Transfer to pastry bag fitted with star tip. Pipe rosettes on cake. Spoon on remaining curd.
