You’ll Love This Simply Irresistible Grilled Peaches With Coconut Ice Cream Recipe

Our quick-prep ginger syrup does double duty as the glaze for juicy fruit

Grilled desserts are the best way to beat the heat and stay out of the kitchen during the summer. While pies and cakes have their place at the table, if you’re firing up the grill for a backyard bash, why not cap off the meal with an al fresco treat right off the hot grates? Our Grilled Peaches with Coconut Ice Cream recipe takes advantage of nature’s bounty for an easy yet elegant finale to any summer gathering.

Fresh fruit is ideal for this outdoor cooking method. In fact, when fruit comes in contact with fire, wonderful things happen! The heat caramelizes sugars, adds a hint of smoke, intensifies flavor and helps release juices. And it’s not just for peaches — try nectarines, plums, pineapple, mango and more. For this Grilled Peaches with Coconut Ice Cream recipe, we make an easy ginger syrup. We spread some on the fruit before cooking, then drizzle on the rest at the end. So yummy! Ingredients

  • 1/4 cup sugar
  • 4 (1/4” thick) round slices fresh ginger
  • 4 peaches, halved, pitted
  • 2 cups coconut ice cream

Instructions

• In pot, combine sugar, 1/3 cup water and ginger. Over medium heat, bring to a boil; reduce heat to medium-low. Cook, stirring constantly, until sugar is dissolved and flavors blend, 1–2 min. Transfer to heatproof bowl; let cool, leaving ginger in syrup. Strain and discard ginger. Prepare grill for medium direct-heat cooking. Brush peaches with some syrup; grill until marks appear and peaches are just tender, about 3 min. Transfer 2 peach halves to each of 4 bowls; dividing evenly, top with sorbet. Drizzle with additional syrup.
