Shortcut Brownie-Filled Ice-Cream Cones Recipe Is the Sweet Treat of Your Dreams

We combined three classic desserts into one mouthwateringly delicious one. 

We’re still kids at heart, and there’s just something about cupcakes baked in ice cream cones that fills us with glee. But as adults, mixing up batter and turning on the oven sometimes  is just too much for our to-do list. Luckily, you can still enjoy that delicious fun without all the work thanks to our Brownie-Filled Ice-Cream Cones recipe. 

Instead of making them from scratch, we use store-bought brownie bites. And to give them a homemade touch, we whip up a quick two-ingredient frosting with just butter and confectioners’ sugar. Pro tip: You’ll want to start with room-termperature butter, but if you forgot to take yours out of the fridge, not to worry! To soften it up quickly, pour boiling water into a glass measuring cup, then spill out the water and place the glass over the butter for 5 minutes. The residual heat will soften the dairy staple gently without melting it, so you can get to baking.

Ingredients

  • 1 cup butter, at room temp.
  • 2 cups confectioners’ sugar Red liquid food coloring
  • ¾ cup dark chocolate chips, melted
  • 20 mini ice-cream cones, from 1.6-oz. pkg.
  • 1 (9.75 oz.) pkg. brownie bites
  • Maraschino cherries and sprinkles (optional)

On medium speed, beat butter until fluffy, 1–2 min. On low, beat in sugar. On medium-high, beat until fluffy, 1–2 min. Transfer half of frosting to bowl; tint pink. Transfer frostings to separate pastry bags fitted with star tips. Spoon chocolate into cones; press 1 brownie into each. Pipe on frosting. Decorate as desired.
