Berry Tropical Parfaits Recipe Is the Perfect Sweet + Creamy Crowd-Pleasing Dessert

Each treat contains 77 calories and features layers of fruit purée and creamy whipped topping

Individual-sized desserts are my favorite treats to make, especially since they’re so easy to serve for a gathering. This recipe for Berry Tropical Parfaits is the perfect single-serve dessert that uses an easy layering technique to transform strawberries, mango and coconut into elegant treats. Sweetened whipped topping is also layered in, which gives the dessert a creamy and fluffy consistency. The best part about this dessert is that it contains only 77 calories and 3 grams of protein per serving. It’s truly a feel-good dessert delight!

If you’re not a fan of the fruit listed in the recipe, swap in a combination of other berries like blueberries, raspberries or blackberries. Moreover, you can prep these parfaits ahead by letting them sit in the fridge overnight in step 3. Then, garnish each parfait before serving.   • 1 (16 oz.) cont. strawberries, trimmed, halved + additional
  • 4 Tbs. Swerve granulated sugar replacement
  • 3 (1/4 oz.) envs. Unflavored gelatin
  • 1 1/2 cups unsweetened coconut milk, at room temp.
  • 2 cups frozen mango pulp, from 2 (14 oz.) pkgs., at room temp.
  • 8 Tbs. non-dairy whipped topping

Instructions

• Place 8 (6 oz.) glasses, tilting diagonally, in 8 muffin cups. Puree 1 cont. berries and 2 Tbs. Swerve. In 2-qt. microwave-safe bowl, mix 1/4 cup water and 1 env. gelatin; let stand until absorbed, 5 min. Microwave until melted, 15 sec.; stir in puree. Spoon into glasses. Chill 1 hr.

• In bowl, stir together coconut milk and 2 Tbs. Swerve. In 2-qt. microwave- safe bowl, stir 2 Tbs. water into 1 env. gelatin; let stand 5 min. Microwave until melted, 15 sec. Stir in coconut milk mixture. Spoon over strawberry layer, leaving glasses on angle. Chill until set, 1 hr.

• In 2-qt. microwave-safe bowl, stir 2 Tbs. water into remaining gelatin; let stand 5 min. Microwave until melted, 15 sec.; stir in mango pulp. Remove glasses from pan. Divide mango mixture among glasses. Chill until set, 1 hr. Dollop with topping; garnish with strawberry halves.
