We all know that spritzes are the unofficial drink of summer — you can’t help but feel relaxed and refreshed when you’re sipping on a sparkling beverage. And for those times when you prefer a mocktail over an adults-only cocktail, we love this Apple Fennel Spritz recipe. It seems like an unexpected combo, but trust us, it’s delicious!

While fennel is typically used for cooking, it also adds a complex and savory freshness to a beverage. And it pairs quite well with apple as the fruity flavors balance out that herbaceous licorice taste. Our recipe also uses simple syrup for a touch of sweetness — simply mix equal parts sugar and water over medium heat until the sugar dissolves, then let cool.   • 2 Tbs. simple syrup
  • 1/2 cup apple juice
  • 1/2 lemon, juiced
  • Sparkling mineral water



In ice-filled cocktail shaker, add chopped fennel, syrup, apple juice and lemon juice. Shake; strain into glass. Fill with mineral water.
