Ingredients
- 2½ cups refrigerated apple cider
- 3½ cups all-purpose flour
- 1¾ cups sugar
- 2 tsp. baking powder
- 1 tsp. ground cinnamon
- ¼ cup butter, melted
- 1 egg
- Oil, for frying
Instructions
PrintIn pot, bring cider to boil over medium-high heat; reduce heat to medium. Cook until cider is reduced by half, (1¼ cups), about 15 min. Transfer to bowl; chill until cool, about 1 hr.
In large bowl, combine flour, ¾ cup sugar, baking powder, cinnamon and ¼ tsp. salt. In separate bowl, whisk together cooled syrup, butter and egg; stir into flour mixture. Using hands, knead until dough forms. Transfer dough to lightly floured surface. Roll out to ½" thick. Using 2½" and 1" round cutters, cut out donuts and centers, reshaping scraps as needed.
In heavy bottom pot, heat 2" oil over medium heat until shimmering or until deep-frying thermometer inserted into oil registers 350°F. In batches, fry donuts, flipping once, until cooked through, 1-2 min. per side. Drain on paper towels. In medium bowl, toss warm donuts in remaining 1 cup sugar until coated. Transfer to rack; cool.
