I’m a huge fan of sandwiches. You can pop just about anything between two slices of bread for a quick lunchtime bite. But I usually crave something just a little more exciting. And this Crispy Chicken Sandwich recipe really fits the bill. With only 6 ingredients, it’s quick to prep. Plus we came up with a condiment that really makes it shine.
To keep things simple, we start with fully-cooked breaded cutlets. Fruit salsas are a delicious way to upgrade sandwiches, grilled meats and more. But they can require a lot of chopping. That’s why we use prepared fresh salsa then combine it with juicy mango. It’s sweet tropical flavor perfectly balances the salsa’s heat. But almost any fruit would be just as tasty – try strawberries, peaches or pineapple. Layer on fresh mozzarella for creamy texture, then stack it all up on crusty bread. So yummy! - 1 (12 oz.) pkg. refrigerated fully cooked breaded chicken breast cutlets, heated
- ½ cup drained fresh salsa
- ¼ cup diced mango
- 4 leaves romaine lettuce, torn
- 1 (16 oz.) loaf crusty Italian bread, cut crosswise into 4 pieces
- 8 oz. fresh mozzarella, sliced
Instructions
PrintHeat oven to 425°F. Line baking sheet with foil. Arrange chicken on top and cook according to package directions. Meanwhile, in bowl, mix salsa and mango. Fill bread with lettuce, chicken, cheese and salsa. Bake on baking sheet until toasted, about 5 min.
