Cranberry-Turkey Panini

No Russian dressing on hand? Get the same sweet and tangy flavor by combining mayonnaise, ketchup and horseradish to taste.

Ingredients

  • 1½ cups coleslaw mix
  • 3 Tbs. Italian dressing
  • ½ cup Russian dressing
  • 8 slices rye bread 
  • ½ cup leftover cranberry sauce
  • 2 oz. sliced leftover turkey
  • 4 slices Swiss cheese
  • 2 deli pickles, sliced

Instructions

  1. In bowl, mix first 2 ingredients. Spread Russian dressing onto 4 bread slices and cranberry sauce onto remaining bread. Assemble sandwiches, layering with turkey, coleslaw and cheese.
  2. Heat panini press or grill pan. Coat sandwiches with cooking spray. Cook 5 min. or until golden. Serve with pickles.
