We all know the nostalgic ice cream sandwich cookies popular throughout the summer months. Well now, winter gets its own, too. Spread some cheer this season with this sugary and colorful chocolate sandwich cookies recipe. And to make it easier, we used store-bought sugar cookie dough and canned vanilla frosting for a 30-minute baking sesh. The dough combines with flour and unsweetened, melted chocolate. Then, its rolled out, cut into perfectly round cookies, and baked to chewy perfection. And for the filling, all you need is a few drops of red food dye into half of the vanilla frosting. This way, some of your cookies will have a pink filling and some white. Serve these sandwich cookies alongside a glass of milk to dunk them in! Or, be adventurous and pair them with cheese.

- 1 (16.5 oz.) pkg. refrigerated sugar cookie dough, at room temp.
- ⅔ cup all-purpose flour
- 4 oz. unsweetened chocolate, melted, cooled
- 1 cup canned vanilla frosting
- Red liquid food coloring
Instructions
PrintHeat oven to 350°F. Line baking sheets with parchment. Knead the first 3 ingredients. Between 2 sheets of wax paper, roll out to ¼" thick. Freeze for 10 min. Using a 2¼" round cutter, cut out shapes, re-rolling scraps. Place cookies 1" apart on baking sheets. Bake until set, 8-10 min. Let cool. Tint half of frosting pink with red liquid food coloring. Sandwich cookies together with frostings.
