Ingredients
- 3½ cups chocolate chips, divided
- 6 Tbs. salted butter
- ½ cup brown sugar
- ½ tsp. peppermint extract
- 1 large egg
- ½ cup Kamut flour
- 6 Tbs. teff flour
- 1½ Tbs. cocoa powder
- 1 tsp. baking soda
- 2½ tsp. vegetable oil
Instructions
- Melt ½ cup chocolate; cool. With mixer on medium speed, beat butter and sugar 1 min. Beat in peppermint and egg. Beat in melted chocolate, flours, cocoa and baking soda 1 min. Chill 30 min.
- Shape 1½ tsp. portions into balls; arrange on lined baking sheets. Bake at 350°F for 6 to 8 min. Cool. Melt 3 cups chocolate; stir in oil. Dip cookies in chocolate to coat. Place on rack; let sit 15 min. or until set.
