Chicken Tortilla Soup

This easy chicken tortilla soup recipe requires only 20 minutes of prep time. Let your slow cooker do all the hard work here!

  • 1 lb. boneless skinless chicken thighs
  • 1 (1 qt.) container chicken broth
  • 1 (14.5 oz.) can diced tomatoes
  • chopped
  • finely chopped
  • 2 tbsp. chili powder
  • minced
  • 2 tsp. ground cumin

In 5- to 7-qt. slow cooker, combine all ingredients. Cover; cook on low 7−8 hrs. until chicken is cooked through.  

Remove chicken; shred and return to soup. Season with salt and pepper.  

Serve topped with cheese, avocado, and cilantro with tortillas on the side.
