Warm & Toasty California Grilled Cheese Recipe Is A Tasty Twist On A Classic

Layered with creamy avocado!

Who doesn’t love an ooey-gooey-good grilled cheese sandwich? Just thinking about all that melty deliciousness served on buttery toast makes my mouth water. But sometimes I crave something a bit more substantial. That’s why I love this California Grilled Cheese recipe. We layer on lots of flavor-packed ingredients that really take it over the top.

We start by sauteing onions until golden brown. This caramelizes natural sugars giving them a sweet-savory note. Then for an extra pop, stir in a dash of balsamic vinegar. Yummy! We slather Italian bread slices with a mayonnaise and mustard mixture, pile on roasted red peppers and creamy avocado. Then to turn it into a complete meal, add turkey and Swiss cheese. The broiler makes quick work of melting the cheese, so it’s ready to eat in practically no time. Give these sammies a try, then let us know what you think.

Ingredients

  • 2 cups thinly sliced yellow onions
  • 1 Tbs. olive oil
  • 1 Tbs. balsamic vinegar
  • 2 Tbs. mayonnaise
  • 2 Tbs. Dijon mustard
  • 1 loaf (1 lb.) Italian bread, cut into 8 slices
  • 1/2 cup sliced roasted red pappers
  • 8 oz. sliced cooked turkey
  • 1 avocado, pitted, peeled, sliced
  • 8 slices Swiss cheese

Heat broiler. In skillet, heat oil over medium-high heat; add onions and cook, stirring occasionally, until browned and softened, about 10 min. stirring. Add vinegar; cook 1 min.

In bowl, combine mayonnaise and mustard. Place bread on baking sheet. Divide mayonnaise mixture, onion mixture and remaining ingredients among slices. Broil 2 min., or until cheese is melted.
