I’m always a little sad to see summer go. But when leaves start changing and the air turns brisk, I’m reminding of all the fall produce that’s in season. And butternut squash is one of my favorites. It’s mild buttery texture can take on other flavors deliciously. That’s what inspired this Brown Sugar-Kissed Butternut Squash recipe. All it takes are 5 ingredients and it turns out absolutely yummy.
Simply toss the squash with shallots, olive oil and brown sugar. For a kick, we stir in red pepper flakes. Not a fan of heat? Substitute 1 tsp. ground cinnamon for the flakes for a mild, warming twist. When cooking with just a handful of ingredients it’s key to coax out the most flavor. That’s why we roast the veggie at a high oven temperature. This caramelizes natural sugars resulting in sweet-savory finish that’s irresistible. Once you taste it, you’ll be a fan too. Ingredients
- 1 large butternut squash
- 1 shallot, diced
- 2 Tbs. olive oil
- 2 Tbs. brown sugar
- 1 tsp. crushed red pepper flakes
Instructions
PrintHeat oven to 400°F. Peel squash, remove seeds, and dice into 1" cubes.
On sheet pan, toss squash with shallots, olive oil, brown sugar, and red pepper flakes. Season to taste with salt and pepper. Roast 45 min. or until squash is tender and caramelized. Transfer to serving bowl.
