Nutella-Stuffed French Toast
This morning sweet treat is loaded with blood sugar–balancing fiber, mood-boosting calcium, and energy-revving antioxidants to keep your little ones full and happy for hours.
- 3 eggs
- 3/4 c. unsweetened almond milk
- 1/4 tsp. ground cinnamon
- 8 large slices whole-wheat bread
- 1/2 c. Nutella
- 2 c. strawberries sliced
In shallow bowl, whisk together eggs, almond milk, and cinnamon. Spread 4 slices of bread with Nutella. Top each slice with 1 slice of remaining bread, pressing together lightly to make sandwiches.
Coat large nonstick griddle or skillet with cooking spray; heat over medium heat. One at a time, dip sandwiches in egg mixture, letting bread soak in mixture for a few seconds. Add sandwiches to skillet.
Cook sandwiches 2 min. per side or until lightly browned, turning once. Transfer to serving plate. Serve topped with sliced strawberries.
